Glutamate

If I need to avoid MSG should I stay away from kelp or kombu?

You are right on avoiding MSG. I do the same thing. My body reacts immediately if I eat food with loads of MSG (particularly food from Chinese restaurants). The ankles are such a giveaway. They grow to the size of tree stumps.

Kombu, on the other hard, is a rich source of glutamate or glutamic acid. This is the amino acid that is extracted to produce the much dreaded synthetic MSG.

If you eat a proper diet, this means that you take in glutamic acid. It's the synthetic MSG that has to be avoided. Read here for more glutamate info.

Eating kombu once a week won't be harmful. BUT please consult your health practitioner just the same.
