Sargassum seaweed for food

by Keith Laurie
(Barbados)

This year in Barbados and in many Caribbean Islands we have had an unusual amount of seaweed primarily Sargassum being deposited on our beaches. Satellite pictures suggest that it is coming from somewhere near the mouth of the Amazon in Brazil rather than from the Sargasso sea.

I would be grateful if you could advise me on the various uses of this seaweed including any recipes for its use in food.
