This is the simplest of seaweed recipes. If you're in a rush, this simple seaweed soup is better than grabbing your instant noodles. (Hey, what's that still doing in your pantry?)
Ingredients: 3 sheets roasted seaweed 1 cup broth (vegetarian or meat-flavored) with 1 cup water or 2 cups water w/ 1 teaspoon seasoning mix) 3 fresh cilantro leaves (coriander) 1 teaspoon sesame oil Ground black pepper to taste
Pour the broth mixture in a saucepan and bring to a boil. Break the seaweed sheets into pieces and add into the boiling water.
Reduce heat and cook for about 5 minutes until the seaweed expands and the soup starts to thicken. Add sesame oil.
Remove from heat. pour the soup into your favorite bowl and sprinkle cilantro as garnish.
Serve hot (sneak in some Maggi, if you feel like it).
Some facts: Sesame has been used as food for a few thousand years and is known to provide high energy. Ladies, add this to your list of must-eats -- it is also known to slow the aging process. A good partner for seaweed!
The next time I cook this simple seaweed soup, I shouldn't just eat it, I should remember to take a picture!
