Does soaking seaweed reduce its nutritional value? Should one use the soaking water?

If you need to soak seaweeds you should not soak them in fresh water. The natural way seaweed reacts to moisture depends on the salinity of the water. Try soak them in water that has a little salt (sea salt only). Also depends how long the seaweed has been dried as seaweed releases a lot of good nutrients if it is soaked after being stored dry for a long period. If you have to soak in order to consume try to keep water left over for soups etc. I do this especially with Laver (NE Atlantic Nori).
