I was wondering what type of seaweed this is. I purchased these at a local market in Denver.

The seaweed you got looks like wakame. There are delicious salad and soup recipes for wakame.

Yes it does make really good soup , The flavor of reminds me of snow crab, it does taste of the ocean. If i am feeling lazy i will just throw some into Ramen Noodle soup with 2cp extra water and a shrimp bouillon cube .
